Organic Blackstrap Molasses has a rich, full bodied flavour that adds natural colour to food. It is the end product, or by-product, of the production of sugar and contains vitamins, minerals and trace elements naturally found in the sugar cane plant and is a good source of iron, vitamin B6, potassium, calcium and magnesium.
Molasses, which is what's left after all that refining during sugar production, retains many of the vitamins and minerals extracted from the raw sugar cane which can be extremely beneficial.
Blackstrap molasses has a low glycemic index, which means the glucose and carbohydrates are metablolised slowly, demanding less insulin production and stabilising blood sugar.
While regular ol’ white sugar actually depletes your body of nutrients, blackstrap molasses will provide you with a whole host of important minerals. Being high in iron, folic acid and B vitamins means it is great for your blood. It is high in calcium and magnesium, which is important for bone production and energy. Because it contains potassium, magnesium and manganese it is also beneficial to the nervous system and heart health. On top of those it contains copper and zinc.
Blackstrap molasses has been touted for its wide spreading healing ability with cases including strokes, arthritis, ulcers, skin conditions, high blood pressure, constipation, varicose veins, anaemia, bladder issues, gall-stones, nerve cases and pregnancy. It is also among the list of alkaline foods, while white sugar is highly acidic.
Blackstrap molasses can be used in place of your usual sweetener. Just test it first to gauge how much you will need to use. It is much stronger than honey and maple syrup.
It can also be used as a tonic by mixing a tablespoon or two with a glass of warm water. Some have used this mix three times a day as a remedy for extreme conditions. It’s best taken before meals.

MAHOGANY CHICKEN WINGS
- 3 pounds chicken wings, split and tips discarded
- 1/2 cup soya sauce
- 1/2 cup honey
- 1/4 Melrose Blackstrap Molasses
- 2 tablespoons chile sauce
- 1 teaspoon ground ginger
- 2 cloves garlic finely chopped
Place chicken in a shallow, medium dish. In a medium bowl, mix soy sauce, honey, molasses, chile sauce, ground ginger and garlic. Pour the mixture over the chicken. Cover and refrigerate for approximately 1 hour, turning occasionally. Preheat oven to 375 degrees F (190 degrees C). In a large baking dish, arrange the chicken in a single layer. Bake in the preheated oven for approximately 50 minutes, brushing it with the remaining soy sauce mixture and turn it once, until meat is no longer pink and the juices run clear.
